Hello Kory, yes, the Moncton train station is still operational. You can travel from Moncton to Gladstone MB by train, although it will be four different trains.
VIA 15 from Moncton to Montreal.

To answer your second question, the VIA Rail “Canadian” travels between Vancouver and Toronto. That’s as far across Canada as you can go on one train.
